🧾 Ingredients Needed
Whilst the ingredients list is short, I've made notes alongside the ingredients below with some tips and substitutions where necessary.
This isn't a churned ice cream so the creaminess levels definitely aren't that of a traditional gelato. I find these popsicles sit perfectly in the middle of a fruit juice ice pop and a churned ice cream. It has the creaminess from the yogurt but the water content in the puree gives it that subtle iciness you'd expect from a fruit pop.
- Peaches - Yellow or white flesh peaches can be used. They need to be at their ripest which in turn helps with the sweet juicy flavour. Substitute with fresh nectarines, plums, or apricots.
- Yogurt - Greek or natural yogurt works here. Just ensure it's full fat to provide the necessary creaminess we're after.
- Lemon zest - The lemon adds a beautiful citrus layer to the peach pops. Ultimately, you don't need to include it, but it just adds that lemony touch.
- Honey - The necessary sweetness from the honey is important to the overall flavour. You can use golden syrup or maple syrup as an alternative but the overall taste will change slightly.
- Salt - I love to add a little salt to my sweet treats to offset the sweetness.
- Cornflour - The cornflour (corn starch) may feel like an odd addition to these fruit popsicles but the starch helps inhibit the formation of ice crystals which in turn keeps the popsicles slightly creamier. You don't taste it I promise.
📖 Variations
- Peach and Thyme Popsicles: Add fresh thyme leaves into the puree before pouring them into the molds. Thyme and peach are widely known as a perfect flavour match.
- Stone Fruit Popsicles: Mix up the stone fruit used with nectarines and apricots for a taste of Summer!
- White Chocolate Peach Pops: Melt 100g white chocolate and stir through the yogurt. Swirl the puree through the yogurt so that you get beautiful ribbons. You can even dunk the frozen popsicles into melted white chocolate for a hard outer shell.
👩🏻🍳 How to Make
You are about to see how incredibly easy these Peach popsicles are to make. Grab yourself your blender and favourite popsicle mold. I share below which one I use.
*Be sure to see the recipe card below for the full ingredients list & instructions!*
NOTE: I use a Nutribullet which isn't a large-capacity blender so I have to make this recipe in two steps. If you have a large blender then throw in all the ingredients and blend together.
STEP 1. Blend fruit. Add the peaches (keeping one sliced peach aside), lemon zest, cornflour, and salt into your blender and blitz until smooth (Images 1 & 2).
STEP 2. Add puree to the remaining ingredients. Add the yogurt and honey to a mixing bowl and pour in the peach puree. Mix until fully combined (Images 3 & 4). Look at that beautiful peachy-pink colour.
STEP 3. Pour mixture into molds. I pour my mixture into a jug with a pouring spout to make this step easier. This is optional but it helps! I like to add the remaining sliced peach into the molds. It's nice to bite down into some of the fresh peaches, plus it looks pretty. Divide the peach mixture evenly between 10 popsicle molds (Images 5 & 6).
NOTE: If you have too much mixture for your popsicles, then pour the remainder into a freezer-safe container, cover, and freeze.
Add the popsicle sticks into the molds and freeze the popsicles for a minimum of 4 hours or until hard. Ideally overnight (Images 7 & 8).
NOTE: Any popsicle mold will work brilliantly. I found these silicon popsicle molds on Amazon and absolutely love them.
TIP: If the popsicle molds that you are using have the ice cream exposed, then make sure to cover that with baking paper, then wrap the molds in plastic wrap. Not only does this stop ice crystals from forming, but also stops other freezer odours from permeating through into the ice cream.
🥣 How To Serve
When ready to serve, pop the ice cream out of the molds and enjoy! That's it! This is such an easy peach ice cream recipe. Minimum effort for maximum flavour makes for the best Summer frozen dessert!
💭 Recipe Pro Tips
- Are your peaches not quite ripe enough? No problem, slice them up, toss in 2 tablespoons of brown sugar, lay them in a baking tray, and roast for 20 minutes. This softens them and draws out the flavour.
- Use a pouring jug. The mixture is very liquidy add can be messy to spoon into the popsicle molds. An easy solution is to use a jug to pour the mixture.
- Place popsicles molds at the back of the freezer where it's colder.
📋 Recipe FAQs
Yes to both! Drain the juice from the canned peaches before adding the fruit to the blender.
For the frozen peaches, occasionally they won't be as sweet as fresh peaches, test the ice cream mixture before pouring it into the molds and add in more honey if needed.
You can totally do this. I personally have no problem with the skin as it disappears in the blender and the skin holds all the goodness. But if you prefer to remove it you can use a potato peeler to do this step quickly.
No problem. Use mini paper cups instead! Pour the ice cream mixture into paper cups, cover each one with aluminium foil then push a popsicle stick through the foil into the cup. Freeze. Once ready to serve, peel the paper cup from the ice cream and enjoy!
❄️ Storage and Freezer Instructions
To freeze: If you just leave the popsicles in the cold, over time they can take on odors from the freezer and get freezer burn on the bottom.
I recommend taking out each peach popsicle and individually wrapping them in plastic wrap or parchment paper before putting the wrapped popsicles into a freezer-safe container or ziplock back. Freeze for up to 3 months.
