Course: Ice-cream & Popsicles
Cuisine: American/British
Servings: 10 popsicles
Calories: 73kcal

Equipment

  • 10 Popsicle Molds

Ingredients

  • 450 g Fresh peaches Stoned and sliced (4 peaches) plus 1 extra peach (optional)
  • 1 lemon zest
  • 1 tablespoon corn flour (cornstarch)
  • ¼ teaspoon fine salt
  • 400 g full fat yogurt Greek or Natural yogurt
  • ¼ cup honey

Instructions

  • Blend fruit. Add the peaches (keeping one sliced peach aside), lemon zest, cornflour, and salt into your blender and blitz until smooth.
NOTE: I use a Nutribullet which isn't a large-capacity blender so have to make this recipe in two steps. If you have a large blender then throw in all the ingredients and blend together.
  • Add puree to the remaining ingredients. Add the yogurt and honey to a mixing bowl and pour in the peach puree. Mix until fully combined.
  • Pour mixture into molds. I like to add the remaining sliced peaches into the molds. It's nice to bite down into some of the fresh peaches, plus it looks pretty. I also pour my mixture into a jug with a pouring spout to make this step easier. This is optional but it helps! Divide the peach mixture evenly between 10 popsicle molds.
Add the popsicle sticks into the molds and freeze the popsicles for a minimum of 4 hours or until hard. Ideally overnight.

Notes

Step-by-Step Photos: My blog post includes helpful step-by-step photos to help guide you through making this recipe.
To Freeze: If you just leave the popsicles in the cold, over time they can take on odors from the freezer and get freezer burn on the bottom. I recommend taking out each peach popsicle and individually wrapping them in plastic wrap or parchment paper before putting the wrapped popsicles into a freezer-safe container or ziplock back. Freeze for up to 3 months.
Tip 1: Are your peaches not quite ripe enough? No problem, slice them up, toss in 2 tablespoons of brown sugar, lay them in a baking tray, and roast for 20 minutes. This softens them and draws out the flavour.
Tip 2: Use a pouring jug. The mixture is very liquidy add can be messy to spoon into the popsicle molds. An easy solution is to use a jug to pour the mixture.
