These easy-to-make plum popsicles are full of vibrant plum puree. They are perfect for a Summer treat, snack or dessert using the very best of the season's stone fruit.
INGREDIENTS NEEDED
1. Toss plum slices with brown sugar, vanilla and salt, and bake for 20 minutes until soft and juicy.
2. Set roasted fruit aside to cool, then blend until pureed.
3. Whip cream to firm peaks in a medium sized bowl.
4. Gently fold through 3/4 of the plum puree into the whipped cream until fully combined.
5. Add remaining 1/4 of puree and swirl through.
6. Divide ice cream into your favourite popsicle holds. Insert wooden stick, wrap in plastic wrap and freeze until hard.
De-mold by running the popsicle holder under water and enjoy straight away!
