4 ingredients and 15 minutes is all you need to make this creamy, delicious lemon curd from scratch.
1. Add lemon juice, zest, sugar and butter into a bowl set over a pan of simmering water until the sugar has dissolved and butter melted .
2. Add in whisked eggs and continue to whisk while the mixture heats up.
3. The curd should visibly thicken. Coat the back of a spoon and a pass should remain separated.
5. Spoon lemon curd into a sterilised jar and close lid. Cool to room temperature then refrigerate. It will thicken as it cools.
