Made in one bowl in a few simple steps, this cake produces a tender soft sponge sweetened with dates and with the perfect walnut crunch. It's utterly delicious!
1. Add dates, butter, bicarbonate of sea and boiling water and stir. Set aside for ten minutes. The dates will soften.
2. Add sugar and eggs and whisk until combined.
3. Sift in flour, baking powder, salt and walnuts. Fold through until a few flour streaks remain.
4.Batter is quite moist.
5. Pour batter into a lined 2lb loaf pan and top with walnuts.
6.Bake for 50-60 minutes. Baked loaf is golden when done. Allow to cool for 10-15 minutes before removing from the pan.
