INGREDIENTS YOU'LL NEED
1. Beat butter and brown sugar until pale. Add in egg yolk and molasses and beat until smooth. Scrape base and sides of the bowl half way through.
2. Sift in the flour, baking soda and spices and mix until dough just starts to come together. Refrigerate for 30 minutes.
3. Scoop dough with a cookie scoop then roll into a ball. Roll balls in sugar and place on baking tray.
4. Bake for 8 minutes until set around the edges. Don't overbake.
